2 ea. 6" Corn Tortillas (dredge in hot oil)
1/4 C. Sliced Pepperjack Cheese
1/4 C. Monterrey Jack Cheese
1/4 C. Chihuahua Cheese
1 ea. Portabello Mushroom Cap
1/2 Red Bell Pepper
1/2 Yellow Bell Pepper
1/4 Med. Zucchini
1/4 Med. Yellow Squash
1/4 C. Tomatillo Sauce
2 ea. 6" Corn Tortillas (dredge in hot oil)
1/4 C. Monterrey Jack Cheese
1/4 C. Ranchero or Red Enchilada Sauce
1 ea. Boneless Chicken Breast (sauteed or grilled)

-- Bake in conventional oven for 20 minutes @325 degrees.
