Claddagh Irish Pub's chicken and mushroom pie


Garlic Cream Sauce

1 Cup Lager (Harp preferred)

1 Cup Heavy Cream

½ Cup Chicken Stock

2  Stalks Celery

½ Cup Leeks

½ Cup Onion

2  Cloves Garlic

½ Tbsp Margarine

½ Tsp Black Pepper

Heat small pot then add Margarine and garlic.

Sauté Garlic until lightly brown

Add  all vegetables and sauté for 5 minutes.

Deglaze pan with lager

Bring Mixture to a boil and add cream and chicken stock.

Add black pepper

Chicken and Mushroom Pie

1 5oz chicken breast

½ Tbsp Margarine

¼ Cup yellow onion cut fajita style

2 oz fresh red pepper

3 oz button mushrooms, sliced

3 oz garlic cream sauce

1 oz heavy cream

2 oz chicken stock

Salt & Pepper

Place Margarine in Large skillet, heat until melted.

Add chicken breast.

Add onions cook until carmelized.

Remove chicken to cut into strips then place back in.

Add Red peppers then add mushrooms and sauté for 1 minute.

Add 3 oz garlic cream sauce, 1 oz heavy cream, and two oz chicken stock, then reduce for around 1 minute. Add salt and pepper to taste.
