Sun-dried Tomato Sauce

Recipe courtesy of Gumbo's Bayou Grille located at the Docks at International Park in east Toledo

1 pound sun-dried tomatoes, chopped
1/4 cup garlic, chopped
1/4 cup Cajun seasoning
1 pound butter
3/4 pound margarine
2 pieces bay leaf
1 bunch green onion, sliced
1 3/4 cups marinara sauce
2 1/2 cups chicken stock
1/4 cup vermouth

Heat chicken stock to a slow simmer
Add sun-dried tomatoes; simmer for 15 minutes
Remaining ingredients are to added at this time
Simmer for additional 20 minutes
