Salad With A Squeeze

Salad Dressing

1/2 teaspoon grated orange rind
1/4 cup fresh orange juice
1/2 cup salad oil
2 tablespoons sugar
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1/4 teaspoon salt

Pour into jar with lid and shake well. Chill

To Make the Salad:

Purchase Boston Bibb lettuce. You want enough lettuce to place several entire leaves on a salad plate. This lettuce comes green or with red leaves. Purchase one or two large cans of mandarin oranges and drain juice. Purchase fresh white mushrooms. Purchase blanched almonds and toast at 350 degrees until lightly browned.

To Assemble Salad:

Wash Bibb lettuce and place two or three whole leaves on salad plate. Then add Mandarin oranges, sliced mushrooms and almonds in the center of the leaves. Pour dressing over the top.

This is a light, delicate salad.

Tips: If your mushrooms are not nice and white, you can peel off the outer layer and they will be pretty. Do not wash mushrooms in water. This recipe is assembled by sight. Try it once and you'll figure out your own proportions. The dressing is enough for 4-6 salads. Serve with a knife and fork. Have Fun!
